  • 1 pound cherry tomatoes halved
  • 1 cucumber English cucumber seeded and diced
  • 0.5 cup red onion thinly sliced
  • 1 bell pepper yellow bell pepper seeded and diced
  • 0.5 cup corn kernels fresh or frozen
  • 0.25 cup fresh basil leaves chopped
  • 0.25 cup fresh parsley chopped

Lemon Vinaigrette

  • 0.25 cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 0.5 teaspoon garlic minced
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper freshly ground

Preparation Steps

  • In a large bowl, combine the halved cherry tomatoes, diced cucumber, sliced red onion, diced yellow bell pepper, and corn kernels.
  • In a small bowl or jar, whisk together the olive oil, lemon juice, dijon mustard, minced garlic, salt, and pepper to create the vinaigrette.
  • Pour the vinaigrette over the vegetables and toss gently to coat. Stir in the chopped basil and parsley.
  • For best flavor, let the salad sit for at least 10-15 minutes before serving to allow the flavors to meld.

Notes

This salad can be made ahead of time and stored in the refrigerator. Add extra herbs just before serving for maximum freshness.
