Sweet Potato Butter Cake

  • 2 cup all-purpose flour
  • 1.5 cup granulated sugar
  • 2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup mashed sweet potato
  • 0.5 cup buttermilk
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, nutmeg, cloves, and salt.
  • In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the mashed sweet potato and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

This cake is delicious served plain or with a cream cheese frosting.
