Sweet Potato Enchiladas

A delicious and easy recipe for sweet potato enchiladas, perfect for a weeknight dinner.

  • 2 lbs Sweet Potatoes
  • 1 cup Olive Oil
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 teaspoon Salt
  • 12 corn tortillas Corn Tortillas
  • 1 cup Enchilada Sauce
  • 1 cup Shredded Cheese

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Boil or bake sweet potatoes until tender. Mash well.
  • In a bowl, mix mashed sweet potatoes with olive oil, cumin, chili powder, and salt.
  • Fill each tortilla with the sweet potato mixture.
  • Roll up the tortillas and place them in a baking dish.
  • Pour enchilada sauce over the enchiladas and sprinkle with cheese.
  • Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
