Preparation Steps
Preheat oven to 350°F (175°C).
Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 3-4 minutes per side, until golden brown.
Remove chicken from skillet and set aside. Add mushrooms to the skillet and sauté until softened, about 5-7 minutes.
Sprinkle flour over mushrooms and cook for 1 minute, stirring constantly. Gradually whisk in beef broth until smooth.
Bring sauce to a simmer and cook until thickened, about 3-5 minutes. Season with salt and pepper to taste.
Place chicken breasts in a baking dish and pour mushroom gravy over the top. Cover with Monterey Jack cheese slices.
Bake for 15-20 minutes, or until cheese is melted and bubbly and chicken is cooked through.
