  • 4 oz Boneless, skinless chicken breasts Pounded to 0.5-inch thickness
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Smothered Topping

  • 8 oz Sliced mushrooms
  • 1 cup Beef broth
  • 2 tablespoons All-purpose flour
  • 4 slices Monterey Jack cheese

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 3-4 minutes per side, until golden brown.
  • Remove chicken from skillet and set aside. Add mushrooms to the skillet and sauté until softened, about 5-7 minutes.
  • Sprinkle flour over mushrooms and cook for 1 minute, stirring constantly. Gradually whisk in beef broth until smooth.
  • Bring sauce to a simmer and cook until thickened, about 3-5 minutes. Season with salt and pepper to taste.
  • Place chicken breasts in a baking dish and pour mushroom gravy over the top. Cover with Monterey Jack cheese slices.
  • Bake for 15-20 minutes, or until cheese is melted and bubbly and chicken is cooked through.
