  • 1 lb Chicken Breast Cut into bite-sized pieces
  • 1 tbsp Coconut Oil
  • 1 cup Yellow Curry Paste Use a good quality paste
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 2 tbsp Fish Sauce
  • 1 tbsp Brown Sugar
  • 1 cup Mixed Vegetables Broccoli, carrots, and bell peppers

Preparation Steps

  • Heat coconut oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned.
  • Stir in yellow curry paste and cook for 1 minute, until fragrant.
  • Pour in coconut milk and vegetable broth. Bring to a simmer.
  • Stir in fish sauce and brown sugar.
  • Add mixed vegetables and cook until tender, about 5-7 minutes.
  • Serve hot with rice.

Notes

Adjust the amount of curry paste to your preference. Serve with jasmine rice for a complete meal.
