Instructions
Preparation Steps
Heat coconut oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned.
Stir in yellow curry paste and cook for 1 minute, until fragrant.
Pour in coconut milk and vegetable broth. Bring to a simmer.
Stir in fish sauce and brown sugar.
Add mixed vegetables and cook until tender, about 5-7 minutes.
Serve hot with rice.
Notes
Adjust the amount of curry paste to your preference. Serve with jasmine rice for a complete meal.
