Tomato Chicken Recipe

  • 1.5 lbs Boneless, skinless chicken thighs Cut into bite-sized pieces
  • 1 can Diced tomatoes 28 oz can, undrained
  • 1 cup Chicken broth Low sodium
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 2 tbsp Olive oil
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides.
  • Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  • Stir in diced tomatoes, chicken broth, oregano, salt, and pepper. Bring to a simmer.
  • Reduce heat to low, cover, and simmer for 20 minutes, or until chicken is cooked through.
  • Serve over rice, pasta, or quinoa.

Notes

Garnish with fresh parsley, if desired. For a spicier dish, add a pinch of red pepper flakes.
