Instructions
Preparation Steps
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides.
Add onion and garlic to the skillet and cook until softened, about 5 minutes.
Stir in diced tomatoes, chicken broth, oregano, salt, and pepper. Bring to a simmer.
Reduce heat to low, cover, and simmer for 20 minutes, or until chicken is cooked through.
Serve over rice, pasta, or quinoa.
Notes
Garnish with fresh parsley, if desired. For a spicier dish, add a pinch of red pepper flakes.
