Tomato Spinach Chicken Spaghetti
Chicken, fresh and sun-dried tomatoes, spinach, basil, and garlic make a bright Mediterranean-style spaghetti in 30 minutes.

Ingredients
- 1/4 cup sun-dried tomatoes chopped and drained
- 2 tablespoons olive oil from the tomato jar
- 1/2 pound boneless skinless chicken thighs chopped
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 4 Roma tomatoes chopped
- 1/4 cup fresh basil chopped
- 8 ounces fresh spinach
- 3 cloves garlic chopped
- 8 ounces spaghetti
- 3 tablespoons olive oil
Instructions
Heat the sun-dried tomatoes and their oil in a large skillet over medium-low heat.
Add the chicken, salt, and red pepper flakes and cook until the chicken is no longer pink, about 5 minutes.
Add the Roma tomatoes, basil, spinach, and garlic and cook for 3 to 5 minutes, just until the spinach wilts. Remove from heat.
Cook the spaghetti until al dente and drain.
Toss the spaghetti with the chicken and vegetables over low heat, then remove from heat and stir in the remaining olive oil.
