Preparation Steps
Broil or grill the eggplants until the skin is charred and the flesh is soft.
Peel the charred skin off the eggplants and flatten the flesh using a fork.
Beat the eggs in a bowl and add soy sauce, salt, and pepper.
Dip the peeled and flattened eggplants into the beaten eggs.
Heat oil in a frying pan over medium heat and fry the eggplant until golden brown on both sides.

Serve hot with rice and a side of ketchup or soy sauce for dipping.
