  • 4 pieces eggplants medium-sized
  • 4 pieces eggs
  • 1 tablespoon soy sauce optional
  • 1 tablespoon cooking oil
  • 1 pinch salt to taste
  • 1 pinch ground black pepper to taste

Preparation Steps

  • Broil or grill the eggplants until the skin is charred and the flesh is soft.
  • Peel the charred skin off the eggplants and flatten the flesh using a fork.
  • Beat the eggs in a bowl and add soy sauce, salt, and pepper.
  • Dip the peeled and flattened eggplants into the beaten eggs.
  • Heat oil in a frying pan over medium heat and fry the eggplant until golden brown on both sides.

Notes

Serve hot with rice and a side of ketchup or soy sauce for dipping.
