Instructions
Preparation Steps
Preheat oven to 375°F (190°C).
In a large skillet, melt butter over medium heat. Add mushrooms and cook until softened, about 5-7 minutes.
Stir in flour and cook for 1 minute. Gradually whisk in chicken broth and heavy cream until smooth. Bring to a simmer, stirring constantly.
Add shredded turkey, thyme, salt, and pepper. Stir to combine and cook for 5 minutes.
Pour turkey mixture into a pie dish lined with the bottom crust. Top with the second crust and crimp the edges to seal. Cut vents in the top crust.
Bake for 45 minutes, or until the crust is golden brown.
Let cool for 10 minutes before serving.
Notes
For a richer flavor, use a mix of wild mushrooms. Serve with a side salad for a complete meal.
