  • 1 pound Elbow Macaroni
  • 0.25 cup Olive Oil
  • 1 cup Sun-Dried Tomatoes Oil-packed, drained
  • 2 cloves Garlic Minced
  • 1 cup Heavy Cream
  • 4 ounces Cream Cheese Softened
  • 1.5 cups Shredded Mozzarella Cheese
  • 0.5 cup Grated Parmesan Cheese
  • 0.25 cup Chopped Fresh Basil
  • to taste Salt
  • to taste Black Pepper

Preparation Steps

  • Preheat oven to 375°F (190°C). Cook macaroni according to package directions. Drain and set aside.
  • While pasta is cooking, heat olive oil in a large skillet over medium heat. Add sun-dried tomatoes and garlic; cook for 2-3 minutes, or until fragrant.
  • Stir in heavy cream and cream cheese. Cook until cream cheese is melted and smooth.
  • Remove from heat and stir in mozzarella cheese, Parmesan cheese, and basil. Season with salt and pepper to taste.
  • Add cooked macaroni to the cheese sauce and stir to combine.
  • Pour into a greased 9x13 inch baking dish. Bake for 20-25 minutes, or until golden brown and bubbly.
  • Let cool slightly before serving. Enjoy!

Notes

For an extra cheesy kick, sprinkle additional mozzarella and Parmesan cheese on top before baking. Feel free to add other vegetables like spinach or artichoke hearts for more flavor and nutrients!
