Twice Baked Potatoes
Creamy, cheesy twice baked potatoes are the perfect side dish or appetizer. These loaded potatoes are easy to make and always a crowd-pleaser.

Instructions
Preparation Steps
Preheat oven to 400°F (200°C).
Wash and pierce potatoes several times with a fork. Bake for 60 minutes, or until tender.
Let cool slightly, then cut in half lengthwise. Scoop out the flesh, leaving about 1/4 inch border.
Mix the potato flesh with butter, cheese, sour cream, green onions, salt, and pepper.
Fill potato skins with the mixture. Bake for another 15-20 minutes, or until heated through and bubbly.
Notes
These potatoes can be made ahead of time and reheated. They are also delicious with bacon bits or chives.
