Tzatziki Sauce with Greek Yogurt, Cucumber, and Dill

Ingredients
- 1 large cucumber ends trimmed, halved, seeded, and grated
- 1 to 2 teaspoons kosher salt plus more to taste
- 2 cups plain Greek yogurt
- 2 tablespoons lemon juice
- 2 cloves garlic minced
- 1 tablespoon fresh dill minced
Instructions
Cut off the cucumber ends, halve it lengthwise, remove the seeds, grate the remaining cucumber, and toss it with the kosher salt. Let it drain in a strainer for at least 15 minutes, then squeeze out as much liquid as possible; aim for about 1 cup grated cucumber.
Combine the drained cucumber with the Greek yogurt, lemon juice, garlic, and dill. Mix well, taste, and adjust the salt, lemon juice, or dill as desired.
Drain the cucumber thoroughly for a thicker sauce.
Chill before serving when time allows.
