Vegan Apple Pie Cookies

Ingredients
- 1 medium apple peeled, cored, and finely diced
- 1 teaspoon lemon juice
- 1 cup all-purpose flour plus more for rolling
- 1/3 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup vegan butter cold and cubed
- 2 tablespoons cold water
Instructions
Toss the diced apple with lemon juice. Combine flour, sugar, cinnamon, baking powder, and salt in a bowl.
Cut in the cold vegan butter until the mixture looks crumbly, then stir in cold water just until a dough forms.
Chill the dough for 15 minutes. Roll it out on a floured surface and cut small rounds.
Place a little apple filling on half the rounds, top with remaining rounds, and crimp the edges with a fork.
Bake at 375°F for 13 to 15 minutes, until lightly golden. Cool before serving.
Use a tart, firm apple for the best texture.
Keep the dough cold so the cookies hold their shape.
