  • 0.5 cup Mushrooms Sliced
  • 1 block Tofu Firm, cubed
  • 2 tbsp Lime Juice Freshly squeezed
  • 2 tbsp Soy Sauce
  • 1 tsp Sugar
  • 0.25 cup Cilantro Chopped, for garnish

Preparation Steps

  • In a pot, combine vegetable broth, coconut milk, ginger, and lemongrass. Bring to a simmer.
  • Add mushrooms and tofu to the pot. Cook for 10 minutes.
  • Stir in lime juice, soy sauce, and sugar. Taste and adjust seasonings as needed.
  • Garnish with cilantro and serve hot.

Notes

Adjust the amount of lime juice and sugar to suit your taste. For a spicier soup, add a pinch of red pepper flakes.
