Vegan Watercress Soup

A refreshing and healthy vegan soup packed with watercress and vibrant flavors.

  • 1 tablespoon Olive Oil
  • 1 cup Chopped Onion
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth low sodium
  • 4 cups Watercress roughly chopped
  • 0.5 teaspoon Salt or to taste
  • 0.25 teaspoon Black Pepper freshly ground
  • 1 tablespoon Lemon Juice

Preparation Steps

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Add the garlic and cook for another minute until fragrant.
  • Pour in the vegetable broth and bring to a simmer.
  • Add the watercress and cook until wilted, about 2 minutes.
  • Remove from heat and carefully blend the soup until smooth using an immersion blender or regular blender.
  • Season with salt, pepper, and lemon juice to taste. Serve hot.

Notes

Serve with a drizzle of olive oil and a sprinkle of red pepper flakes for extra flavor.
