Instructions
Preparation Steps
Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic and cook for another minute until fragrant.
Pour in the vegetable broth and bring to a simmer.
Add the watercress and cook until wilted, about 2 minutes.
Remove from heat and carefully blend the soup until smooth using an immersion blender or regular blender.
Season with salt, pepper, and lemon juice to taste. Serve hot.
Notes
Serve with a drizzle of olive oil and a sprinkle of red pepper flakes for extra flavor.
