This Vietnamese Chicken Salad, or Gỏi Gà, is a refreshing and flavorful dish perfect for a light lunch or dinner. It's packed with shredded chicken, crunchy vegetables, and a tangy lime dressing.

  • 1.5 lbs Boneless, skinless chicken thighs
  • 1 medium Red onion Thinly sliced
  • 1 cup Shredded cabbage
  • 0.5 cup Shredded carrots
  • 0.5 cup Chopped cilantro
  • 0.25 cup Chopped mint
  • 0.5 cup Roasted peanuts Roughly chopped

Dressing

  • 0.25 cup Lime juice Freshly squeezed
  • 2 tbsp Fish sauce
  • 2 tbsp Sugar
  • 1 clove Garlic Minced
  • 1 small Red chili Minced (optional)

Preparation Steps

  • Poach chicken thighs in simmering water until cooked through. Let cool slightly, then shred with two forks.
  • In a large bowl, combine shredded chicken, red onion, cabbage, carrots, cilantro, and mint.
  • In a small bowl, whisk together lime juice, fish sauce, sugar, garlic, and chili (if using).
  • Pour dressing over the chicken and vegetable mixture. Toss well to combine.
  • Garnish with chopped peanuts before serving.

Notes

Serve immediately or chill for later. Best served cold or at room temperature.
