  • 1 lb uncooked boneless skinless chicken breast cut into 1-inch cubes
  • 0.5 cup fat-free egg substitute
  • 0.5 cup dried plain bread crumbs
  • 1 tsp paprika
  • 0.5 tsp garlic salt
  • 1 cup fat-free plain Greek yogurt
  • 1 tbsp dry ranch seasoning mix
  • 2 cups celery sticks
  • 2 cups baby carrots
  • Cooking spray

Preparation Steps

  • Preheat oven to 425°F (220°C). Coat a large baking sheet with nonstick cooking spray.
  • In a shallow bowl, place the fat-free egg substitute. In a separate shallow bowl, mix the bread crumbs, paprika, and garlic salt.
  • Dip the chicken cubes into the egg substitute, then toss in the bread crumb mixture until fully coated.
  • Place the coated chicken pieces on the prepared baking sheet and lightly spray the tops with cooking spray.
  • Bake for 15 minutes, or until the chicken poppers are golden brown and cooked through.
  • While the chicken bakes, prepare the dip by whisking together the fat-free Greek yogurt and dry ranch seasoning in a small serving bowl.
  • Assemble the snack guide board by arranging the baked chicken poppers, celery sticks, baby carrots, and the bowl of ranch dip on a large platter.

Notes
