White Bean Minestrone

A hearty and healthy white bean minestrone soup packed with vegetables and flavor.

  • 1 tablespoon Olive Oil
  • 1 cup Chopped Onion
  • 2 cloves Garlic minced
  • 2 cups Diced Carrots
  • 2 cups Diced Celery
  • 6 cups Vegetable Broth
  • 1 can Diced Tomatoes (14.5 oz), undrained
  • 1 can White Beans (15 oz), rinsed and drained
  • 1 teaspoon Dried Oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 cups Chopped Kale

Instructions
 

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, garlic, carrots, and celery and cook until softened, about 5-7 minutes.
  • Stir in vegetable broth, diced tomatoes, white beans, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Add kale and cook until wilted, about 5 minutes.
  • Serve hot.

Notes

Serve with crusty bread for dipping.
