Instructions
Preparation Steps
Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, garlic, carrots, and celery and cook until softened, about 5-7 minutes.
Stir in vegetable broth, diced tomatoes, white beans, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
Add kale and cook until wilted, about 5 minutes.
Serve hot.
Notes
Serve with crusty bread for dipping.
