Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add onion and celery and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
Add white beans, ditalini pasta, oregano, salt, and pepper. Simmer until pasta is cooked through, about 10-12 minutes.
Stir in fresh parsley. Serve hot, garnished with grated Parmesan cheese.
Notes
Serve with crusty bread for a complete meal.
