White Bean Minestrone

A hearty and flavorful white bean minestrone soup, perfect for a comforting meal.

Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion chopped
  • 2 stalks Celery chopped
  • 2 cloves Garlic minced
  • 6 cups Vegetable broth
  • 1 can Diced tomatoes (28 ounces), undrained
  • 1 can White beans (15 ounces), rinsed and drained
  • 1 cup Ditalini pasta
  • 0.5 cup Chopped fresh parsley
  • 0.25 cup Grated Parmesan cheese for serving
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion and celery and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Add white beans, ditalini pasta, oregano, salt, and pepper. Simmer until pasta is cooked through, about 10-12 minutes.
  • Stir in fresh parsley. Serve hot, garnished with grated Parmesan cheese.

Notes

Serve with crusty bread for a complete meal.
