  • 0.5 cup All-purpose flour for dredging
  • 0.25 cup Olive oil
  • 0.25 cup Dry white wine such as Pinot Grigio
  • 0.25 cup Chicken broth
  • 4 tablespoons Lemon juice freshly squeezed
  • 4 tablespoons Butter cold, cut into cubes
  • 2 tablespoons Capers drained
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Pound chicken breasts to 0.5-inch thickness. Season with salt and pepper. Dredge in flour, shaking off excess.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
  • Add white wine to the skillet and scrape up any browned bits from the bottom. Add chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, or until slightly reduced.
  • Reduce heat to low and whisk in cold butter, one tablespoon at a time, until the sauce is emulsified and glossy. Stir in capers.
  • Return chicken to the skillet and spoon sauce over top. Heat through for 1-2 minutes. Garnish with fresh parsley, if desired. Serve immediately.

Notes

Serve Chicken Piccata over pasta, rice, or mashed potatoes. A side of steamed vegetables also complements this dish well.
