  • 0.75 cup creamy peanut butter
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

Preparation Steps

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  • Scoop 1-inch balls of dough and place them on the prepared baking sheet. Use a fork to press a crisscross pattern into the top of each cookie.
  • Bake for 9-10 minutes, or until the edges are just set but the centers are still soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For the best chewy texture, be careful not to overbake the cookies. They will continue to firm up as they cool on the baking sheet.
