Chicken Gnocchi Soup

Instructions
Preparation Steps
Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
Add onion and garlic to the pot and cook until softened, about 5 minutes.
Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Stir in heavy cream, gnocchi, thyme, salt, and pepper. Bring to a simmer and cook until gnocchi is tender, about 5-7 minutes.
Add chicken and spinach to the pot and cook until spinach is wilted and chicken is heated through, about 2 minutes.
Serve hot and enjoy!
Notes
Garnish with fresh parsley or grated Parmesan cheese, if desired.
