Chicken Gnocchi Soup

A creamy and comforting soup with tender chicken, pillowy gnocchi, and plenty of vegetables.

  • 1 lb Boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp Olive oil
  • 1 cup Diced onion
  • 2 cloves Minced garlic
  • 4 cups Chicken broth low sodium
  • 1 cup Heavy cream
  • 16 oz Potato gnocchi
  • 1 cup Chopped spinach
  • 0.5 tsp Dried thyme
  • Salt and pepper to taste

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  • Add onion and garlic to the pot and cook until softened, about 5 minutes.
  • Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  • Stir in heavy cream, gnocchi, thyme, salt, and pepper. Bring to a simmer and cook until gnocchi is tender, about 5-7 minutes.
  • Add chicken and spinach to the pot and cook until spinach is wilted and chicken is heated through, about 2 minutes.
  • Serve hot and enjoy!

Notes

Garnish with fresh parsley or grated Parmesan cheese, if desired.
