  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 5 egg yolks large
  • 0.5 cup granulated sugar for custard
  • 0.25 cup granulated sugar for topping

Preparation Steps

  • Preheat the oven to 325°F (160°C).
  • In a saucepan, warm the heavy cream and vanilla extract over medium heat until hot but not boiling.
  • In a bowl, whisk together egg yolks and 0.5 cup sugar until pale and thick.
  • Slowly pour the hot cream into the yolk mixture, whisking constantly.
  • Strain the mixture through a fine sieve and pour into ramekins.
  • Place ramekins in a baking dish and fill the dish with boiling water halfway up the sides of the ramekins.
  • Bake for 35-40 minutes or until just set.
  • Refrigerate for at least 2 hours. Before serving, sprinkle the remaining sugar and caramelize with a torch.

Notes

This recipe can be prepared up to 2 days in advance and kept refrigerated without the sugar topping.
