Ingredients
  

  • 1 whole chicken about 3-4 lbs, cut into pieces
  • 2 cups 240g all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper optional, for spice
  • 2 large eggs beaten
  • 1 cup 240ml buttermilk
  • 2 cups Crisco shortening for frying

Instructions
 

Prepare the Chicken:

  • Pat the chicken pieces dry with paper towels.

Make the Coating:

  • In one bowl, combine flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne.
  • In another bowl, whisk together eggs and buttermilk.

Dredge the Chicken:

  • Dip each piece of chicken into the buttermilk mixture, then dredge in the flour mixture, ensuring it's evenly coated.

Heat the Crisco:

  • In a large skillet, melt Crisco shortening over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken:

  • Fry the chicken in batches for 12-15 minutes per side until golden brown and cooked through.
  • Transfer to a wire rack to drain excess oil.

  • Serve hot with coleslaw, biscuits, or mashed potatoes!
