  • 0.75 cup granulated sugar
  • 0.5 cup gluten-free all-purpose flour blend
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup boiling water

Preparation Steps

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, whisk together cocoa powder, sugar, flour, baking powder, and salt.
  • Add softened butter, eggs, and vanilla extract. Beat until well combined.
  • Gradually add boiling water, mixing until smooth.
  • Drop by rounded tablespoons onto prepared baking sheets.
  • Bake for 10-12 minutes, or until edges are set.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
