Preparation Steps
Prepare the jars and lids by sterilizing in hot water.
In a large pot, combine the peaches, lemon juice, and pectin.
Bring to a rolling boil, then add the sugar. Stir until dissolved.
Boil for exactly 1 minute, stirring constantly.
Remove from heat and skim off any foam. Pour into jars immediately.
Seal the jars and process in a boiling water bath for 10 minutes.
Notes
For a more intense flavor, allow the peaches to macerate in sugar overnight before proceeding with the recipe.
