Ingredients
  

Crumb Base & Topping

  • 1.5 cups All-purpose flour
  • 0.75 cup Rolled oats
  • 0.75 cup Granulated sugar
  • 0.5 cup Brown sugar packed
  • 0.75 cup Cold unsalted butter cubed
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt

Raspberry Filling

  • 1 cup Raspberry jam
  • 1 tablespoon Lemon juice

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease and flour an 8x8 inch baking pan.
  • In a large bowl, combine flour, oats, granulated sugar, brown sugar, baking powder, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Press half of the crumb mixture into the prepared baking pan.
  • In a small bowl, combine raspberry jam and lemon juice. Spread evenly over the crumb base.
  • Sprinkle the remaining crumb mixture over the raspberry jam.
  • Bake for 30-35 minutes, or until the top is golden brown.
  • Let cool completely before cutting into bars.

Notes

Serve with a scoop of vanilla ice cream for an extra treat!
