Preparation Steps
In a large pot or Dutch oven, combine the chicken thighs, chicken broth, carrots, celery, and onion.
Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chicken is cooked through.
Remove the chicken from the pot and shred with two forks. Return the shredded chicken to the pot.
Add the ditalini pasta, oregano, salt, and pepper to the pot. Simmer for another 15 minutes, or until the pasta is tender.
Stir in the fresh parsley. Serve hot with lemon wedges.
