  • 1 cup Diced celery
  • 1 cup Diced onion
  • 0.5 cup Ditalini pasta
  • 1 tsp Dried oregano
  • 0.5 tsp Salt to taste
  • 0.25 tsp Black pepper to taste
  • 2 tbsp Fresh parsley chopped
  • 1 lemon Lemon wedges for serving

Preparation Steps

  • In a large pot or Dutch oven, combine the chicken thighs, chicken broth, carrots, celery, and onion.
  • Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chicken is cooked through.
  • Remove the chicken from the pot and shred with two forks. Return the shredded chicken to the pot.
  • Add the ditalini pasta, oregano, salt, and pepper to the pot. Simmer for another 15 minutes, or until the pasta is tender.
  • Stir in the fresh parsley. Serve hot with lemon wedges.
