Crust

  • 1.5 cups Graham Cracker Crumbs
  • 0.33 cup Granulated Sugar
  • 0.33 cup Unsalted Butter melted

Filling

  • 24 oz Cream Cheese softened
  • 1 cup Granulated Sugar
  • 0.5 cup Sour Cream
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Vanilla Extract
  • 0.25 teaspoon Lemon Zest

  • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of each cupcake liner.
  • In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream, lemon juice, vanilla extract, and lemon zest until well combined.
  • Spoon filling into each cupcake liner, filling almost to the top.
  • Bake for 20-25 minutes, or until the edges are set but the center is still slightly soft.
  • Let cool completely in the muffin tin before refrigerating for at least 2 hours.
  • Garnish with lemon zest or a dollop of whipped cream before serving.

Notes

For a smoother filling, make sure your cream cheese is completely softened. You can also add a graham cracker crumb topping before baking for extra crunch.
