Instructions
Preparation Steps
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg, vanilla extract, and lemon zest until well combined.

In a separate medium bowl, whisk together the flour, baking soda, and salt.

Stir in the rolled oats until evenly distributed.

Notes
For extra lemon flavor, you can add a simple lemon glaze made from powdered sugar and lemon juice after the cookies have cooled.
