Instructions
Preparation Steps
In a large pot or Dutch oven, sauté the onion, carrots, and celery over medium heat until softened, about 5 minutes.
Add the red curry paste and ginger and cook for another minute until fragrant.
Stir in the chicken broth, coconut milk, and soy sauce. Bring to a simmer.
Add the chicken and cook until cooked through, about 10-15 minutes.
Stir in the lime juice. Season with salt and pepper to taste.
Serve hot and garnish with fresh cilantro or green onions, if desired.
