  • 4 cups Chicken broth
  • 1 can Coconut milk
  • 2 tbsp Red curry paste
  • 1 tbsp Soy sauce
  • 1 tbsp Lime juice freshly squeezed
  • 1 tsp Ginger grated

Preparation Steps

  • In a large pot or Dutch oven, sauté the onion, carrots, and celery over medium heat until softened, about 5 minutes.
  • Add the red curry paste and ginger and cook for another minute until fragrant.
  • Stir in the chicken broth, coconut milk, and soy sauce. Bring to a simmer.
  • Add the chicken and cook until cooked through, about 10-15 minutes.
  • Stir in the lime juice. Season with salt and pepper to taste.
  • Serve hot and garnish with fresh cilantro or green onions, if desired.
