Instructions
Preparation Steps
In a large bowl, toss the chicken cubes with flour until evenly coated.
Heat vegetable oil in a large skillet or wok over medium-high heat. Fry the chicken in batches until golden brown and cooked through. Remove and set aside.
In the same skillet, combine pineapple juice, white vinegar, sugar, ketchup, and soy sauce. Bring to a simmer.
Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
Add the fried chicken back to the skillet and toss to coat with the sauce.
Serve hot with rice and your favorite vegetables.
