  • 1 lb Ground Beef Lean ground beef recommended
  • 1 oz Taco Seasoning Store-bought or homemade
  • 16 oz Pasta Rotini or elbow macaroni
  • 1 cup Mayonnaise
  • 0.5 cup Sour Cream
  • 1 cup Shredded Cheddar Cheese
  • 0.5 cup Diced Tomatoes
  • 0.25 cup Sliced Black Olives
  • 0.25 cup Chopped Green Onions

Preparation Steps

  • Cook ground beef in a large skillet over medium heat until browned. Drain off any excess grease. Stir in taco seasoning and 0.25 cup water. Simmer for 5 minutes.
  • Cook pasta according to package directions. Drain and rinse with cold water. Set aside.
  • In a large bowl, combine mayonnaise, sour cream, shredded cheddar cheese, diced tomatoes, sliced black olives, and chopped green onions.
  • Add the cooked ground beef and pasta to the bowl and mix well to combine.
  • Cover and chill in the refrigerator for at least 30 minutes before serving.

Notes

Optional: Top with crushed tortilla chips or a dollop of guacamole before serving.
