Preparation Steps
In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
Add the diced onion and minced garlic to the pot and cook until softened, about 5 minutes.
Pour in the beef broth and diced tomatoes. Stir in the mixed vegetables, Italian seasoning, salt, and pepper.
Bring the soup to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the vegetables are tender.
Taste and adjust seasonings as needed. Serve hot.
Notes
For a richer flavor, add a tablespoon of tomato paste to the soup. You can also add other vegetables like celery, carrots, or potatoes.
