  • 1 lb Ground Beef Lean ground beef recommended
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 4 cups Beef Broth
  • 28 oz Diced Tomatoes Undrained
  • 1 cup Mixed Vegetables Frozen or fresh
  • 1 tsp Italian Seasoning
  • 0.5 tsp Salt Or to taste
  • 0.25 tsp Black Pepper Or to taste

Preparation Steps

  • In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Add the diced onion and minced garlic to the pot and cook until softened, about 5 minutes.
  • Pour in the beef broth and diced tomatoes. Stir in the mixed vegetables, Italian seasoning, salt, and pepper.
  • Bring the soup to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the vegetables are tender.
  • Taste and adjust seasonings as needed. Serve hot.

Notes

For a richer flavor, add a tablespoon of tomato paste to the soup. You can also add other vegetables like celery, carrots, or potatoes.
