Ground Chicken Mexican Corn Recipe

Ground chicken, corn, black beans, tomatoes, and taco seasoning come together in a skillet meal that can be served in bowls or with tortillas. This page follows the six ingredients in the chicken recipe card below.

Editorial review: An unrelated Mushroom Swiss Patty Melt card and conflicting casserole and soup instructions were removed from this page. The ingredient list and method now describe one skillet version. This text review does not mean the recipe has been kitchen-tested; the card’s preparation time, yield, and seasoning balance still need practical confirmation.

Ingredients

  • 1 lb ground chicken
  • 1 cup frozen corn
  • 1 can black beans, drained and rinsed
  • 1/2 cup diced tomatoes
  • 1 packet taco seasoning
  • 2 tablespoons olive oil

The original card does not specify the size of the bean can or seasoning packet. Check those labels before cooking, and follow the seasoning manufacturer’s directions if it requires additional liquid. The quantity and sodium level will vary by product. No extra salt is listed in this version.

Skillet method

  1. Drain and rinse the black beans, measure the corn and tomatoes, and have the taco seasoning ready. Keep raw chicken separate from ingredients that will be served without further cooking.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground chicken and break it apart with a spoon. Cook it thoroughly, using a food thermometer to confirm it reaches 165°F (74°C). Browning alone does not establish safe doneness.
  3. Stir in the taco seasoning. The existing card allows about one minute at this stage; follow the packet’s directions, including any required liquid, and stir so the seasoning does not scorch.
  4. Add the frozen corn, drained beans, and diced tomatoes. Bring the mixture to a simmer and stir until the corn is cooked and all ingredients are hot. The existing card gives about five minutes, but this is an estimate: the corn brand, skillet, and heat level can change the time.
  5. Serve hot. Optional toppings from the original card are sour cream, cheese, and avocado. Add those at serving time.

The poultry temperature above follows the USDA safe minimum internal temperature chart. Cooking time is an estimate and cannot replace a thermometer check.

Serving ideas and variations

Serve the skillet mixture in bowls or alongside tortillas. Rice can be prepared separately according to its package instructions. These accompaniments and toppings are optional and are not included in the six-ingredient list or preparation-time estimate.

This version is a skillet meal. It does not include an oven-baked casserole or a soup, because the older article introduced broth, additional vegetables, and baking steps that were absent from its recipe card. Those would need their own measured recipes and testing.

What still needs testing?

The card lists four servings and a 35-minute total, but this page does not claim those values were verified in a kitchen. Can and packet sizes should be recorded during testing, along with the finished yield and actual cooking time. Nutrition values have been removed because the former repeated values were not a reliable calculation.

If you spot an unclear quantity or step, leave a comment with the product sizes and cooking method you used so the issue can be reviewed.
